Itinerary:

1. Meet & Greet : Start your day with a warm welcome from our Executive Chef at Fairmont Miramar Hotel & Bungalows Lobby.

2. Farmer’s Market Tour: Embark on a 45 minute guided tour of the local and infamous Santa Monica Farmer’s Market. As you explore the open-air market steps away from the hotel, Chef will share insights on selecting the best seasonal produce, meats, and other ingredients. Together, you will purchase fresh ingredients based on your dietary preferences, gaining a deeper appreciation for the farm-to-table journey.

3. Private Dish Tasting at FIG: Return to FIG, where the Chef Damon will use the ingredients purchased from the market to prepare you bespoke dishes. This private tasting allows you to savor the flavors of the season, expertly crafted into dishes that highlight the freshness and quality of the market’s offerings.

This exclusive experience not only provides a unique insight into the culinary philosophy of FIG Restaurant but also offers a personal connection to the ingredients and our chef’s creative process. About Executive Chef Damon Gordon: With 25 years of culinary expertise under his belt, Executive Chef Damon Gordon brings decades of experience to create innovative and delicious seasonal delicacies at Santa Monica’s farm-to-table restaurant, FIG at the iconic Fairmont Miramar Hotel & Bungalows. Born in Ipswich England, Gordon discovered his passion for cooking & texture at a young age, a gift he inherited from his mother growing up where he often cooked alongside her. He then went on to pursue a career in cooking, earning a degree in Culinary Arts from Suffolk College before he trained under culinary powerhouses such as the Roux Brothers & Marco Pierre White, Claude Troisgros, and Alain Ducasse. In search of a new adventure, Gordon ventured to the United States in 2000 where he spent time in New York, Washington D.C. and Miami and worked closely with the Lawry’s group, before joining the team at FIG as Executive Chef in 2022.
